What’s for dinner tonight?

This is a dinner for four guests that I am preparing today. This seems like a nice finish to a hard day of skiing in Telluride, Colorado.

ASH CURED MORBIER CHEESE
crushed basil pesto & crusty baguette

CRAB CAKE
avocado, sweet corn puree
and parsley oil

ORGANIC BABY GREENS
Gorgonzola, candied pecans, and sherry vinaigrette

WHOLE ROASTED BEEF TENDERLOIN
white truffle-mushroom ragout

PARSNIP PUREE WITH BUTTER AND PARSLEY

STEAMED ASPARAGUS

CHOCOLATE FONDUE
ice cream sandwiches, pound cake
and strawberries
