To make a really quick dinner tonight, try tossing some veggies in a Mojo sauce before putting them on skewers. Use what you have but we like boiled fingerling potatoes, mushrooms, cherry tomatoes, red onion, red peppers. and green onions. Spice things up by adding a lime wedge and a serrano chile to each skewer. Use some of that same Mojo sauce to marinate a whole pork tenderloin. Then throw the pork and the skewers on the grill. Slice the pork and serve it with any leftover Mojo and be sure to squeeze the nicely grilled lime wedge from your skewer over your pork.
Mojo Sauce
1/2 cup Extra Virgin Olive Oil
2 TBSP garlic, minced
1/2 tsp ground cumin
1/2 cup orange juice
1/4 cup lime juice
1 tsp salt
1/2 tsp pepper

I like to add 1/2 teaspoon of crushed red pepper to the “Mojo Sauce”, for a nice little kick. Have fun.

My Mom is Cuban and she said you nailed this one dead on. You can’t eat pork in a Cuban house without it. My Mom also uses it with sliced onions on top of baked fish. Cilantro is sometimes added too to the mojo.
