Making Appetizers at Aemono Fine Foods LIVE

Here are the recipes we covered on today’s LIVE show. We made some great appetizers with Chef Mike Guskea at Aemono Fine Foods in Telluride, CO.

Hummus

Hummus

6 cups garbanzo beans (reserve 3/4 of juice)
1 TBSP cumin, kosher salt
1 tsp garam marsala
1 tsp pepper
1 tsp granulated garlic
4 cloves garlic whole
1 TBSP honey
2 TBSP mayo
Juice of 2 Lemons
Zest of 1 lemon
1 cup tahini

Food process until very smooth, adding liquid from the garbanzo beans if needed.

Grape Leaves (Not Dolmas)

2.5 lbs ground beef
1 lbs ground sausage
2 cup tomato sauce
2 TBSP salt
2 TBSP pepper
2 TBSP dry oregano
2 TBSP dry basil
2 TBSP granulated garlic
juice 1 lemon
zest 1 lemon
3 cups raw sushi rice
1 TBSP chopped garlic
36 Grape leaves

Mix all ingredients, roll in grape leaves. Bake at 350 in covered dish with water (just above the grape leaves), salt, pepper, little olive oil and lemon juice for about 2 hours. Rice should be soft.

Feta Dip

2 cups mayo
1 tsp salt
1 tsp pepper
1 tsp crushed chilies
1 TBSP extra virgin olive oil
1 tsp fresh garlic
1 cup feta cheese
Juice of 2 lemons

Blend all ingredients in food processor. Depending on personal preference you could just mix all ingredients in bowl and leave chunky!
