Homemade Ice Cream Sandwiches

Posted on 14 March 2009 by TheChefsWife

Our kids were so excited about ChefBud making ice cream sandwiches for work tonight that he just had to make extra for them.

To make them, ChefBud uses Nabisco Famous Chocolate Wafers. He cuts frozen ice cream into one inch thick slices and then uses a cookie cutter to cut the ice cream into circles which he places on a chocolate wafer. Placing another wafer on top, he pushes down gently until the ice cream reaches the edge of the wafer. The completed ice cream sandwiches go into the freezer until time to serve.

Obviously, they are delicious alone, as my kids had them today, but ChefBud is serving them tonight to dip in Dark Chocolate Fondue. Yum!
